Instead of one chef presenting a few recipes, In Trucs of the Trade we have 48 superstar chefs providing 93 trucs-French for tricks or shortcuts used in cooking. What results is a sequence of quick demonstrations, ranging in content from ordinary (hamburger) to rarefied (quail eggs). Somewhere in this 72-minute tape there should be at least a dozen trucs for any cook. B+
