Anonymous Latin American line cooks. ''No shrieking and wailing...for Manuel. He's a professional, not some flighty 'artist,''' Bourdain says. ''We need more Latinos to come here. And they should, whenever possible, impregnate our women.''

The Skinny
Bourdain might curtail some of that macho posturing, but this shameless he-man sure can write.
