Because Christmas music is less a style than a state of mind, it mixes well with other genres. Though radically different, is A Creole Christmas. The music rejoices in the holiday while cataloging the rich diversity of Louisiana pop. Allen Toussaint takes a spicy boogie-woogie romp through ''White Christmas,'' while Rockin' Dopsie makes ''Jingle Bells'' ring with a zydeco flair. The Zion Harmonizers do a soul-stirring, churchified rendition of ''Go Tell It on the Mountain,'' and the Dixie Cups put an R&B gloss on ''Let It Snow, Let It Snow, Let It Snow.'' All of this is very tasty, if not entirely Christmas-y. A
