The ultimate ''Eat your spinach'' doc, since that's literally the film's message. Yet even if you're a junk-food junkie, this exploration of the health benefits of a ''plant-based diet'' is so scrupulously researched and argued that only a fool would ignore its findings. It centers on two veteran scientists, Drs. T. Colin Campbell and Caldwell Esselstyn, who both grew up on farms but now, armed with devastating statistics, assert that all meat and dairy consumption (even the high-end organic stuff) contributes hugely to the risk of cancer, heart disease, stroke, and diabetes. It's not, for a lot of us, a tasty message, but it's a worthy one. B+
