Call it the non-engagement engagement ring. In recent weeks, both mama Madonna and Kate Hudson (Almost Famous) have sported huge pieces of the rock. The unattached Lucy Liu showed up at the Emmys with a gem on her finger, as did Penélope Cruz in Cannes. It doesn't take a gemologist to spot this trend: Diamonds have become a single girl's best friend. They're also perfect for the gal who has everything: The three-stone ring that Guy Ritchie gave the Material Girl was her first (and was perhaps inspired by his new diamond heist flick, Snatch). ''A diamond is a symbol of success and self-empowerment,'' says Kelly McMahon of the Diamond Information Center at J. Walter Thompson, ad agency for DeBeers, noting that boyfriends give the rocks as a token of ''commitment to past, present, and future.''
