STARS ON 54: ULTRA NATE, AMBER, JOCELYN ENRIQUEZ ''If You Could Read My Mind'' (Tommy Boy) The first soundtrack single from the disco epic 54 remakes Gordon Lightfoot's ultralight 1971 hit ballad as a house anthem via this all-star diva trio. Not a bad idea, and no doubt the bit about languishing ''in a fortress strong/with chains upon my feet'' gains newly debauched meaning here. But while true exuberance threatens, the arrangement holds back, and even the fierce Nate sounds kinda tame. Wait for the remixes. B
