VARIOUS ARTISTS Stone Country (Beyond) Subtitled ''Country Artists Perform the Songs of the Rolling Stones,'' this witless, listless collection ropes in everyone from Travis Tritt (you just know he thought he was born to sing ''Honky Tonk Woman'') to George Jones (sleepwalking through ''Time Is on My Side''). In between, artists as mediocre as Collin Raye and as excellent as Rodney Crowell fail to bring fresh ideas to an utterly unsurprising list of Jagger-Richards standbys. Saved from an ''F'' by Deana Carter's delicately pretty ''Ruby Tuesday'' and Nanci Griffith's invigoratingly salty ''No Expectations.'' D-
