BRYAN ADAMS Unplugged (A&M) Adams omits a few of his more rocking hits in favor of schmaltz, but mostly he has fun taking chances on his acoustic gig. ''Heaven'' has an almost a cappella spareness worthy of its title, and other rearrangements bring to mind border rancheros, two-steps, bagpipe-and-pennywhistle Highland folk, Stonesy garage rock, and Rod Stewart. Even the 16-piece Juilliard orchestra sounds less snobbish than stately. B
