DIGITAL BEETHOVEN ON CYBERSPEED (Bureau of Electronic Publishing, CD-ROM for PC and Mac, $50) The Great Kat, Juilliard violin prodigy -- turned -- caterwauling speed-metal guitarist, may be abrasive, but judging from this disc, she's never boring. Kat leads you through a multimedia tour of classical music that's by turns informative (with concise profiles of composers and instruments), self-indulgent (in one segment, Kat parades across a simulated TV screen like the talk-show guest from hell), and room clearing (check out the three-cats-in-an-Osterizer version of ''Ride of the Valkyries''). The official-sounding Bureau of Electronic Publishing shows some pretty good chops of its own, supplying neat interactive doodads that perfectly counterpoint Kat's lunacy. A-
