The sometimes wraithlike Bruno Ganz (Nosferatu) is all intensity as Hoffman, a scientist left partially paralyzed after he's shot by police. As he relearns basic motor and speech skills, the slow-paced Knife in the Head charts his progress with a Teutonic exactness that leaves the more relaxed among us ashamed. C-
