THE DISNEY VILLIAN Ollie Johnston and Frank Thomas (Hyperion, $45) Welcome to Disney Animation 101. Your professors: two delightfully outspoken octogenarians who honed their drafting skills on the studio's cartoon features from the '30s through the '70s. The syllabus: a probing, critical consideration of what worked (and didn't) about virtually every drawn Disney bad'un, from the hammy evil queen in 1937's Snow White right up to the sly Jaffar in last year's Aladdin. The copious illustrations are beautifully chosen, sized, placed, and printed, and the whole project is happily adult. Nowhere else will you see a pencil sketch clearly delineating Cinderella's buttocks, or catch Disney Studios chairman Jeffrey Katzenberg calling Beauty and the Beast's treacherous Gaston ''a real son of a bitch.''
