Mark Canton is Mr. Reach-Out-and-Touch-Someone. His double-barreled Rolodex, which is bulging with some of the most sought-after private numbers in Hollywood, packs enough star power to blow out the tires on Arnold Schwarzenegger's Humvee. The chairman of Columbia Pictures estimates that he gets several hundred calls every day, and it's his well-organized Directory of Everyone Everywhere that keeps him from mogul meltdown. ''It's a Rolodex so complete,'' Canton says, ''that the phone company has been known to call us to check on new numbers.''
