A Southern-fried fish-out-of-water story, Doc Hollywood stars Michael J. Fox as a fast-track doctor stranded in Grady, S.C., ''the squash capital of the South.'' It's filled with idiosyncratic touches (a pet pig named Jasmine follows the Doc around) and eccentric characters (when the town's regular doctor drinks too much, he recites Walt Whitman). Fox is likable, if not surprising, as the Alex P. Keatonish doctor, Woody Harrelson (Cheers) is outlandish as a superhick insurance agent, and George Hamilton is particularly biting as a ponytailed L.A. plastic surgeon. One of last summer's hits, Doc promises to have a long, healthy life on video. A-
