She may take dictation while getting spanked by James Spader in Secretary, but lately Maggie Gyllenhaal is honing more refined talents. To prep for next fall's Mona Lisa Smile, she and costars Julia Stiles and Kirsten Dunst have been sent to finishing school in Manhattan for two weeks. ''It sounds like fun,'' says the actress, 24, who plays a 1953 Wellesley College student studying under free-spirited prof Julia Roberts. ''You learn to fox-trot and put your napkin on your lap.'' But don't expect Smile's Oscar-winning costar -- already the picture of Hollywood grace -- to sit through any etiquette lessons. ''Julia isn't going,'' says Gyllenhaal.
