WHY HER Witherspoon drove ''Sweet Home Alabama'' to one honey of an opening weekend at $35.6 million, making MGM's decision to sign her to a ''Legally Blonde'' sequel (''Red, White & Blonde'') look that much smarter. One of the few actresses under 30 in the eight-figure club, she's proving to be both biz savvy (snagging a producing credit for ''Red, White & Blonde'') and image conscious (her next planned film will be ''Vanity Fair'' with indie director Mira Nair).
