Given the insatiable appetite for new film and TV material, critically acclaimed books don't stay on the market for long. Unless, say, they're 650-page tomes on John Adams. ''There was no competition,'' says exec producer Gary Goetzman, recalling his decision (with partner Tom Hanks) to option David McCullough's biography for a seven-part miniseries. Their casting choices Paul Giamatti as Adams and Laura Linney as his devoted wife were also bold. ''My God, he's a fantastic actor,'' gushes Goetzman of his pretend prez. But was there anyone else up for the role? Like a certain two-time Academy Award winner, perhaps? ''Tom and I did not ask Tom Hanks to be in John Adams.... We didn't even think of him.'' Alynda Wheat
