The man whose global culinary curiosity laughs in the face of your gag reflex returns for a season focusing on weird-ass grub in America. The premiere — which brings our host home to the Twin Cities — starts a bit blandly, with tweaks on comfort staples like casseroles and Jell-0. But then he fills our plates with Midwestern freakiness, catching a snapping turtle to deep-fry, concocting a Tater Tot-topped dish featuring goat kidney, and snacking on a guinea-pig-confit cone from a food truck. And leave it to him to salute the ''nutty'' notes of brined-and-breaded duck testicles. B+ —Dan Snierson
